A few years ago we became hooked on Starbucks’ ginger molasses cookies. They were so moist and delicious and every time I would stop for a coffee (which is almost a daily occurrence), the kids would beg me to buy them a ginger molasses cookie.

Then, we moved to Cold Lake, a small town in northern Alberta and guess what? There was NO Starbucks!! I had withdrawal for several months…I’m serious. It was hard. I missed their lattes and the kids missed their ginger molasses cookies.

I found the following recipe online at Best of Bridge in 2009 and decided to give it a try. I can’t find the original recipe online anymore, but here’s a link to a similar one they call Ginger Snaps. I figured they would be good, but I never dreamed they would be even better than Starbucks!!


One day last week I managed to have these ready – warm out of the oven – for the kids when they got home from school. They were SO excited. Trust me…this doesn’t happen often. Like, hardly ever.

With my oldest in Grade 11 and graduating next year, I’ve been thinking a lot lately about what it will feel like when she leaves home and, eventually, when we are “empty nesters.” Mixed feelings on that one. So, for now, I’ll enjoy these after school smiles for as long as I can.

    I like easy and quick recipes and this one looks perfect. Will give it a try when my daughter is home over Christmas break.

    We all love Ginger snaps!:) I like baking fresh cookies if I can and having fresh fruit to go with them after school. Of course this doesn’t always happen and as they get older and busier it’s hard to accomplish this. However, kids at any age love the smell and taste of fresh homemade cookies.
